What's the difference between flan and pudding? The pudding I always see in my Japanese animes looks a lot like flan, though most things labeled as pudding in my country's stores are liquidy and come in cups.

Hospice worker here. I recently had a patient who was an old japanese lady who had a stroke and could only eat pureed food. She had no family, but a qt japanese friend who would bring her food and she would bring a pudding that looked exactly like flan. I never asked her what it was, but she made it herself so it's probably some kind of japanese pudding that just looks like flan.

The pudding is made with agar/jelly but mixed with cocoa powder making the substance not quite bouncy, then hardened in refrigerator.

the white sauce is made with milk, sugar, butter, egg yolk, rum and additional aromatic like vanilla if needed.
