You're wrong. Yes, Shovel Knight cheats, but you're ignorant of the NES's hardware. The CPU was 8-bit, but the color palette and sound channels were not. The NES color palette is actually 6-bit. The NES has a palette of 64 colors, but there are multiples of black so that gives it a usable palette of only 56 colors. An 8-bit color palette would actually consist of 256 colors. In addition, sprites were limited to three colors plus transparency and had to be 8x8 or 8x16 in size depending on the mode chosen for the game (the vast majority of the games used 8x8 tiles). Those limitations were cleverly used in later titles to make a full "sprite" have more than 3 colors via overlapping (like Mega Man) and placing sprite tiles side by side. Each tile was still limited to 3 colors and transparency.

I don't know what Shovel Knight uses for its extra sound channels, but the NES sound hardware used two square waves, a triangle wave, a noise channel and a DPCM channel.
