I want to get into Metroid. Where do I start and why is the NES

You don't really have to play Metroid 2 before Super.

The intro to Super Metroid catches you up on the entire story up to that point, so you can play Super first if you want.

Zero Misson, Metroid 2, Super Metroid, Fusion and if you want, Other M after Fusion

Prime doesn't really matter for above so play em in order whenever, don't bother with Prime Hunters

The 2D games you can play in pretty much any order, but if you want to follow the Dark Samus plot you really have to play the Prime games in order

NES Metroid is hard because there's no map screen.

Play Zero Mission, it's a great remake of the original, and an example of a remake done right.

Then play Super Metroid, and then Fusion.

You can try Prime, but I'm not a huge fan because it's not Metroid to me. I saw you mention chronological order in one of the posts above, so take note that Fusion takes place after every Metroid game.

ZM is alright to start with even though it's honestly the weakest 2D Metroid. Once you get to the ZS section you can stop playing, by then you've beaten the content the original Metroid had and the final section of the game is pretty awful so just skip it.

Play ZM (this is a remake of the original), Super, and Fusion. Those games are classic Metroidvania gameplay which you can expect to see in Samus Returns.

There was no map, and with NES graphics, most rooms didn't look distinctive enough to help with navigating.
If you draw your own map on some graph paper, you're still likely to die a lot, but at least you'll know where you died.

NES, while not bad is very dated. Zero Mission is an updated remake, if you want to start with Metroid 1, start with Zero Mission. In the big picture though, continuity and story isn't a huge thing for Metroid, so you can easily leap in at any game really.

Zelda games, at a fundamental level, can be identified as action RPG. Sometimes people say that another game is "Zelda-like" but it's still quite vague and not clear-cut.

Part of it is time. There was a while between Super Metroid and Prime. If Zelda had skipped directly from ALttP to Twilight, it might have gotten a more "not muh zelda" reception.
