It makes sense to me that Mehrune's servants become increasingly aggressive and deadly as more and more gates open up, so battling badass daedra and cults sounds fine to me.

At level 15 there's a spike in difficulty where new creatures spawn that absolutely destroy you if you don't minmax.

But at at level 40 (I think? It's been a while) is where it gets absurd. Every roadside bandit has the best weapons and armor in the game. Common enemies suddenly have so much health that a maxed out character with the best items can swing at it for several minutes before it finally dies. Quest rewards don't scale (hope you didn't do any important quests before hitting max level!) and you can't find better gear until it's so common it may as well be automatically added to your inventory the moment you level up.

There were actually quite a few escort quests, and the entirety of the main quest is full of NPC allies who can die like Baurus and Jauffre, and other little small characters.
Without a heal other spell, your allies are pure FUCKED and will die of attrition, unless you savescum. Unless waiting for one hour heals them too, it's been a while.

I feel like the leveling system in TES games works okay for some things, but terribly for a lot of other things.

Like combat skills you just get exp for hitting things, okay. You can hit a lot of things, so that's fine, and generally you'll be going through dungeons or at least fighting things so you'll be hitting a lot of things to hit in a normal playthrough.
Speechcraft is a pain in the ass to level because most ways to increase it are so out of the way and cumbersome, and it hardly ever seems to be worth it because there aren't any notable situations in TES games that I can remember that can be simply solved through talking to some guy.

You can take the start the clavicus vile quest from one of his followers at level 1, then go kill umbra and exchange it for the mask to bypass the lvl 20 requirement

however because umbras wielder is not leveled to you, she starts at lvl 50 with ebony armour and the umbra sword, it's very hard if not impossible to kill her legit

You don't really need to 'level' them if you're playing vanilla. They level by themselves or you can simply use trainers.
Although, by jumping a lot and from higher places does level your acrobatics much faster which is great because with high enough numbers and some buffs you can literally jump over people, roofs and do some crazy shit.
