FES is better because it gives you a complete and enhanced presentation of the game while taking nothing away from the original.
P3P is a port that stripped down many parts of the game because of data limitations, and so it hurts the presentation, making it worse for your first experience.

I usually recommend FES because it does a better job helping you immerse yourself in the game and keeping a strong atmosphere around the player.

Although I guess playing it in a non-optimal way is still better than not playing at all.
I would recommend you try FES if you ever get the chance down the line since it's so different from P3P that it feels like a new game altogether
