What game lets me get so lost in dungeons (or anything similar like pic related) that will me make frustrated as fuck? Preferably something without a map.
What?
Why would you want that?
Why not try something like Etrian Odyssey where you make your own map?
Descent, every level is a fever dream esque low-res maze from hell, I think there's a map but I think you can turn it off too
Legend of Grimrock 1. The entire game is set in a never-ending dungeon, and the story, although pretty loose, is still interesting.
Anon, there's even an option to turn off the map, when all the corridors look the same because it's a fucking DUNGEON

FF 12 Great crystal zone. Enjoy spending days in it.

mmmm lovely motion sickness
Hollow Knight
I've read Salt & Sanctuary doesn't give you map, but I haven't played it.

Not OP but: I found LoG to be pretty easy to traverse, though I did use the map. If I didn't have it or had to make my own, I bet it would have been a different story. It's still a good game overall. LoG2 is better though I think.

What game?

System Shock
Might and Magic 6
Good dungeons to boot too
Meritous
Icewind Dale if you can handle the rage.
Also bumping because I wouldn't mind playing another game with an epic dungeon crawl
Skyrim

You should mention that this is a game is on zero gravity so it's not like there's an up and down to keep you from disorienting yourself.

What's better? Classic or Enhanced?

Wizardry series sounds exactly like what OP is looking for.
1-3 if you want a really oldschool experience.
4 if you're a complete and utter masochist.
5 is kind of its own thing.
6-8 are fucking amazing games but more ambitious and sprawling.

I never got people's love of this game. The combat is ass and the level design sucks.
