Interesting, I should check out Crysis 3. I don't buy Ubisoft games on principle though. I am from Canada and bows aren't illegal at all. I am aiming for something where I can hunt, stalk, and kill, without actually killing a living creature.

New Tomb Raider
Assassin's Creed 3 (and 4 if I remember right)
Horizon Zero Dawn
Far Cry (especially Primal)

The god-king is Monster Hunter but it's very different experience from the games above.

Horizon is bows:the game. But be aware that real animals mostly die in one hit to any part of the body. Good hunting is only against robot animals.

Also The Last of Us had brief but good bow hunting segment where you play as a loli. It's not what the game is about though.

Well bow hunting is a part of main Ubi open world formula now. It's done well more often than not regardless of the overall game quality.

Start WoW with a night elf hunter if you can stand the graphics. First three locations are forests where you can do lots of hunting. If you start on a pirate server you won't encounter a single person and that improves the game a lot.
