Yennefer had absolutely no reason to ever not agree with Emhyr's proposal. She too was a prisoner sentenced to death, but I'm pretty sure the moment her memory came back and Emhyr uttered the name Ciri, nothing else really mattered to her anymore.
As for Geralt: he never was his prisoner (not since Emhyr let him and Yen go at the end of the last book), and I don't think Emhyr would have persecuted him if he declined the offer. Not that it would be a realistic option though.
