Universal basically strong-armed TT into finishing it in a year. Apparently the original idea is a lot more similar to what Twinsanity did, more of an open-world type of structure. A bunch of minibosses were planned that would actually be fought in the middle of levels. The original ending was also completely different, you'd actually fight Crunch instead of him just randomly being unconscious in the final cutscene.

Then there's random cut segments that are par for the course with the series, but the original vision of the game was incredibly different.
