As someone who's never touched a doom game in their life is this a good place to start at? I don't really like the idea of having to find keys but the combat seems fun.
Nu-doom is good but start with the original, it's timeless.

Original Doom is timeless in the sense that Street Fighter II laid down the groundwork for the entire genre going forward. You can play classic Doom and SFII to get a good understanding of the genre from a fundamental standpoint, however nobody should actually recommend them to pick up if you want a game from those genres. Unless if it's for a certain novelty like nostalgia, custom content (wads) or a LAN/couch session, which Doom co-op is totally cool for. If you are asking for a game to start with in the FPS genre, Doom '93 might be an okay choice. If you are asking for a game to start with in the series, it might be a slower onboarding choice.

That hyperbole isn't helping your case. It was a good, creepy shooter that still manages to look nice today. It's more of a survival horror than a shoot em up but it's still fun.
