In most general purpose cars it's anywhere between 2000-3500 RPM. Listen to the revs of the engine and when it starts to get really loud that's probably when you should be changing gears. Though in general smaller cars will start revving loudly at the lower end of that range while some cars with a larger engine can stay a bit longer in the gear and will rev more loudly at the higher end of that range.

If you want a really basic nutshell version think of it like this, i'm not American so you'll probably have to convert the speeds maybe but I dunno.

1st Gear = 0-20 KM/H
2nd Gear = 20-40 KM/H
3rd Gear = 40-60 KM/H
4th Gear = 60-80 KM/H
5th Gear = 80+ KM/H

Bear in mind this is not a hard rule as some cars have 6 gears and others have different engine types which can affect optimal shifting speed ranges. It's really better to have personal instruction though.

You can only really stall when starting from a dead stop, which is shockingly easy to do when learning. It took me like 6 months to not stall out constantly.

Pretty much this. It's stupidly simple in normal cars, the only difficult thing with shifting is feeling out how to get started from a dead stop. You need to slowly let off the clutch until it starts to catch and give it gas when it starts to. Not enough gas and the car will stall out, too much gas and you'll start too fast. Also dropping the clutch too fast when giving it gas too early causes you to grind gears.

Driving manual is like 10% learning and 90% getting a feel for how to start from a dead stop.

Shit always enraged me, so many Americans don't understand how a manual works in comparison to an automatic. Personally I feel like driving a manual makes you a better driver, you pay much more attention to the cars momentum instead of just relying on the fact that being in drive makes you always move forward.

Then again I live in Florida in a low traffic area so I'm in a pretty deal spot for a manual car.

It gets real easy to do after driving for a while. Some modern manual cars even have special uphill brakes that hold the car in gear and then disengage automatically when you accelerate. You can also still do it the old fashioned way with a handbrake when you're starting out but after a while you just sort of git gud at it and know how to hold the rev point with the clutch.
