Dark Souls 1 was patched many, many times and it's still a buggy mess. I can't imagine them digging back into the code to optimize if for a the Switch. The PC port is barely functional without DSfix and it is so CPU intensive that you can barely play it on the recommended hardware.

1 had the egg hosts, quelaag and her sister, the oolacile parasites, and the sludged corpses in New Londo.

I played through the first dark souls a year-ish ago. It was pretty fun, but I wasn't in a rush to play the others. Now I'm feeling the itch again.

Is 2 even worth playing? I hear it was pretty bad, and that SotFS made it worse. If not, should I jump right into 3? The idea of playing a souls game before the multiplayer dies does sound nice.

Let's say you're on the bus playing Dark Souls and the bus you're on passes a car. That car's driver has a Switch in sleep mode in his bag, but he has a Dark Souls save on that Switch. With the Street Pass functionality maybe his share can be exported to the player currently playing on the bus and appear as a summon sign somewhere nearby him or as an NPC Invader. Obviously it's not perfect since he'd have to be an NPC but it still opens up the door for possibilities.
