Does anyone else have a hard time getting into "relaxing" games like Stardew Valley / city builders? It's like I need to have some competitive aspect or something.

Stardew Valley has a few quests/stories you can follow to raise your friendship with the villagers if your problem is not having an objective. Half of the fun for me was to discover more about the characters.

But I'm always so worried about my crops and if they'll grow in time and if I'm wasting my time growing this type instead of another and if I should do quests instead and managing my energy and getting a new backpack and etc.

If you're not fully autistic you shouldnt try to min-max in a game like Stardew Valley, just take it easy and do what you feel like doing.
On my first playtrough for example i just planted a few of every plant for gifting/cooking and just made money by mining
As for energy, later in the game it has very little importance since you can easily refill it with food
