Ayame is a great character who goes through a full arc.
Rikimaru also had a pretty rad story.

Turok: Dinosaur Hunter had some pretty fucked ones. Getting dissolved by praying mantis acid and getting eaten by mecha t-rex are ones that stuck in my head after all these years.
