Super Mario 64 has a much more satisfying sense of momentum than any of those. Galaxy arguably has better level design than 64, but it leaves you with little player agency, and due to its controls, a lower skill ceiling. So, again, 64 can be a much more satisfying game, even if Galaxy is more "fun" from moment to moment.
The 2D Marios are a different pair of shoes, but if you prefer them to Mario 64, I can see why you would also prefer Galaxy to 64/Sunshine.

My original point remains though: if a person comes up to you and says "I like Mario", chances are they just mean the New SMB series, or some game they played in their childhood but don't really remember the name or the system or whatever. If someone comes up to you and names a very specific Mario game, they probably have a decent power level.
