X/X2 definitely has the most content but I can't stand X, you'll generally find you love it or hate it because of its extreme linearity. I'd say that's the most harmful part of X's replayability. I don't remember much of X2 but I remember it being much more open-ended.
Odin Sphere is a completely different sort of game, it's an action RPG. It looks and plays great, but it recycles a ton of content. By the time you beat it you will pretty much already have replayed it 3 or 4 times with how aggressively it recycles content. Again, you'll either fall in love with it and play everything or you'll get bored of the gameplay in a few hours.

For me and I don't want to disrespect you, Disgaea is a boring grindfest with horrible gameplay, music and plot.

X, if you can wait until the endgame for the grinding. Being able to beat all the superbosses requires a lot of grinding and collecting
