Some say it's to regulate G-forces from forcing all their fluids into their feet (but their crafts also have G-Diffusers) and some think it's to enhance their speeds on the ground.

Metal legs were a pre-G-Diffuser concept. G-Diffusers weren't added until SF64 where they retconned the metal legs from SNESFox.
