I'm pretty sure FF7, Tactics and VIII were handled by the same localization team. Square might have had more time to polish FF8's localization before hitting shelves, but it's still mostly on par with the other games. You're just not looking hard enough.

FYI, that's not actually a retranslation. It looks like they just reworded the English script, or ran a bunch of lines through Google Translate and made arbitrary edits to it. The person heading that project doesn't even speak a word of Japanese.

Despite some Engrish, the original translation of FF7 is fairly accurate to the source. It's the Spanish translation that suffered the most, because the translator had no context to go with.

It has some questionable stuff going on with its story (which is blown a bit out of proportion honestly, we've had much worse plot twists in the FF series than "amnesia orphanage")but even after the first disc of the game there's some really cool moments like the Balamb Civil War, Balamb vs Galbadia Garden, the missile base infiltration, the final battle against Seifer with the Odin moment, and those weird feelings you get every time you step into an area as Squall and realize you've already been there as Laguna.

Well see the problem there is that the "professionals" see it as more of localizing the game than just purely translating it. So if that means sacrificing integrity of the original script in some ways to make things sound less jarring to the foreign audience then that is okay to them.

Picking "Sorceress" instead of "Witch". So many people completely missed out on the whole Knight/Witch dynmaic, which is the entire point of the plot. It's almost a medieval romance set in the future.

Also why Edea talks about Witches having been persecuted by man in teh past, why they're all female, why Rinoa is scared of and so on. Everyone needs to replay the game at least once with this in mind, it changes everything.
