One problem I had with Ultra is some of the characters added were ridiculous.

All ridiculous. Rolento and Decarpe have near full screen fireball punish Ultras that have like 7 frames of start up.

Not that guy but Third Strike has the worst roster and worst balance of any SF game, two things that are important to me personally. I'm also not a big fan of the aesthetic and the parry mechanic trivialized neutral play somewhat.

I really enjoy SFV but it has a problem when it comes to offensive options. Pressure, oki, and throw mixups are insanely strong in SFV with little to offset them aside from v-reversals, which are not worth using for some characters. There are also a lot of little 50/50 setups in the game that make you guess.

Actually I'm going by recent top 8s from the game which are dominated by Yun and Chun from what I can see. Also the roster is absolutely shit, you would have had to start with Third Strike to like 85% of that eyesore of a roster. Only good characters native to the game are Dudley, Makoto, Ibuki, and Urien. No World Warriors = trash SF game.

Roster is not bad, but the unbalanced part is what i can agree on. Parrying does kill the zoning game and it opens up a lot of doors to things. I can be that one nigga to parry everything and punish you with a life sentence.

The first few versions of 3 really were a mess. It wasn't until Third Strike that it became polished. But at that time, the arcades were dying, and it was forgotten by most non-hardcore fighting fans. Third Strike didn't really pick up again until 2004 when it was released on the PS2.
