I'm recently watched Castlevania on Netflix. I'm pretty interested in giving the series a try now. Is Castlevania a game worth playing, and if so, which game in the series should I start with?

If you are planning on going through the entire series, then just play from release order. If you don't really care, start with Symphony of the Night.

Try Castlevania 1 and 3 for some classic NES challenge to start off afterwards I'd recommend Super Castlevania IV, it's overall easier than the NES games but it has a lot of QoL improvements like you can use your whip in 8 directions. Then try out Bloodlines which has 2 selectable characters and is more difficult than SCIV but no 8 direction whip although you can still use it diagonally and if you can try and emulate Dracula X Chronicles on the PSP for a remade version of Rondo of Blood with some more content, whatever you do stay away from the SNES Dracula X.

Emulating is stupid easy for NES and SNES. Literally takes 5 minutes tops
