The character models looked extremely cartoony because apparently the ones ingame were made months prior to the release of the game due to some shit that went down where the original character assets were deleted during development.
The music is way too damn prissy because EA had the teenage girl demographic in mind as the primary audience rather than the traditional Maxis route of appealing to every demographic.
There's not enough personality variation, all men look flamboyant and can only dress to look like a metrosexual with very feminine traits. You can't make some ultra masculine trailer trash without them having some goofy ass retarded smile of some sort.
While it was truly 3D and had aging, it ultimately stripped so much content and didn't have enough features to justify a full price compared to the full set of expansions that Sims 1 acquired by then. You had to enter a cheat just to turn off aging ffs. This has been a problem with all Sims sequels. They add one or two new features and then press a hard reset button and say "ok time to repurchase $500 worth of content again over the course of 5 years goyims!"
Modding for the game was horrid, it lacked the ease of creating assets for the Sims 1. And it wasn't because of furniture models being 3D, it more had to do with how bad the engine was and importing and creating 3D models wasn't an easy process.
Degeneracy started to become big starting with Sims 2. I don't mean light shit, I mean you could dress a boy in makeup and a leather bike outfit and it was pretty fucked up. You couldn't identify if your Sims were straight, bi, or gay so if you gave freewill to them, your supposedly straight character will start making out with someone the same sex for no reason at all.
It was creatively bankrupt. Like its successors, Sims 2 just piggybacked on the clever and witty humor of Sims 1 and repackaged it over and over and over again. Any new content was shit.

I need to replay 1 or 2 but I have to go through the expansions one at a time instead of installing complete right away. Play for a few hours with all the content from an expansion before installing the next expansion. Rolling content is the only way to appreciate each expansion or I wouldn't even notice most of it.

The later games don't even have explicitly homosexual NPCs. I think all Sims have a hidden preference score that changes depending on which sexes you make them flirt with. All Sims are bisexual by default, but NPC Sims will never try to flirt with same-sex characters. (They might if you put them in enough same-sex relationships to alter their preference score, but I don't know exactly how that works)

No idea about Sims 4. I haven't played that one. And by the way, The Sims games for GBA and DS removed the ability to romance same-sex characters, possibly because the ESRB would have bumped them up to a T rating. (As if gay relationships are implicitly more adult in nature than straight relationships)

I'll explain how it is in TS4 up to this point (piratefag so havent got the patch yet)

When you CAS it's pretty normal, except hidden below the male/female icons is a ....

You click it and it expands a menu that basically asks "This sim can get other sims pregnant/This sim can get pregnant/Neither" and so forth. As far as I know, the default options are what you'd expect, so i dont think you'll ever accidentally create a tranny unless you want to.

Now with wicked whims it outright asks if your character has a penis. So with that mod i think you can make proper dickgirls
