Get the pro controller. I just got one yesterday and it makes the switch feel like a home console with a comfy as fuck gamepad. (Which I wish had symmetrical sticks)

The Joycon grip is actually pretty damn great, you don't really need the pro controller, though it's always nice to have it.

Then don't. Switch games have actual compression anyway, so most of them are around 4GBs. And the cards don't require installing shit, so stop thinking on absolutes and you'll see how 32 GBs will last you a ton.
