Why Dark Souls 3 was so soulless?
Felt like no one in the development team cared about game at all

Because they were on a contract and needed to make 2 more games when they never had any plans for more after 1. So they turned it into a tribute to all the souls games and made it an All Stars of everything people loved from previous games.

Its funny because the games theme of weakening cycles fits well with the tedious rehashing cycle of the series development

I literally enjoyed DaS2 more than DaS3. DaS3's weapons and movesets are fucking boring and the enemy design is zzzzzz. DeS, DaS1 and DaS2 involved a lot less waiting around for the untelegraphed 6-part combo of the standard enemy that will kill you in 2 hits of said combo to end. They had a lot more trash mobs and shit you can run past easily (which is fine and makes the game flow better on your way back to the fog gate). DaS3 fanboys need to check themselves.

I dunno, I ended up liking DS3 more than bloodborne.
Mainly because of the restrictions they put on PvP, and being able to find ways around those restrictions as well.

Like if you really want to be a dick, you can just get to ng+ at a relatively low level, summon a npc, and watch them fucking destroy invaders

Nexus and flamelurker themes were great
Firelink shrine, sig, moonlight butterfly and Gwyn from the das
Das2 main theme was thanks to the des main theme undertones, also Old Dragonslayer, mirror knight and Nashandra themese
All tracks in the borne were god tier, but I loved hunter dream soundrack that starts after you kill rom and red moon rises, also ludwig

I think Dark Souls 2 is actually the weakest game in the series, but I keep coming back to it. I finally figured out why. It's the worst game, but it's also the easiest to cheese once you know the mechanics. That makes replaying it less stressful because you can just grab the OP shit really fast and faceroll the rest of the game. Take strike damage for example. Most slashing weapons technically have a higher AR, but there probably less than five enemies in the game that actually have any strike defense at all. This leads to the club and mace having some of the best DPS in the game just because nothing resists that type of damage. Couple this with the unbelievably shitty durability system and you're forced to use the highest damage weapons in the game because all your other shit will break halfway between bonfires. The playstyles are limited this way, but the actually viable builds are ridiculously powerful.
