Guilty Gear has the best tutorials of any fighting game. But if you don't like anime and dashing around, go with Tekken.

Tekken is loads of fun but holy shit is it hard to git gud. I'm sure GG is the same way but if you've never played a 3D fighter before then expect to get shit on for a long time.
