Actually a lot of the game gets easier if you learn to play without lock on. Especially in DaS 1 where your rolls are locked into 4 cardinal directions while locked on.

there's only a couple of good spots for grinding once you get into the mid 20's. if you're grinding for one of the early bosses, you're just not using your character right. you shouldn't have to do that until much later. and it doesn't take very long once you figure out the best spots.

The kind of people that like dark souls are the kind of people who are going to try not to get hit. Notice how the game prominently features a parry, a roll and a blocking system?

Now, if you aren't that kind of person, and you want to get enjoyment out of dark souls, even though there are plenty of games out there that are probably more for you, then sure, you can. But then don't complain that you are being "forced" to do it. Besides, it's only going to give you minor results anyway. It's still massively more important to learn how to evade, though.
