I think STEP is a decent way to do it if you want a hands off experience with modding.

PC, I've had it for a while, got it on sale a couple years back. A friend of mine who has similar tastes to myself said that it gets very samey pretty quickly, and that the main story was 12 year old original fiction tier

On the other hand you should never play any game modded first. You should always play it unmodded first so you can gain an appreciation of the base gameplay.
