You should definitely watch Turn A, 0079, Zeta, 0083, Chars Counterattack and Gundam F91

Also since you liked wing, you might like After War Gundam X, the art style is very similar but there's much less use of stock footage and the story is better. Unfortunately, the show was cancelled 39 episodes in for some reason, but the ending is servicable.

IBO is definitely the weakest entry in the series' that you've watched, but it's not as bad as things like SEED/SEED Destiny or Age. Also stay away from ZZ and Buildfighters Try.

Gundam The Origin & Gundam Unicorn are also pretty good with some great animation. They're pretty much the predecessors of Thunderbolt in terms of high-quality Gundam OVAs. However, you won't be able to fully appreciate them unless you're familiar with the Universal Century Timeline, which is another reason to watch most of the UC shows I've mentioned above.

08th MS Team is alright, but it really shits the bed in the 2nd half of the show, and gets a lot of hate on /m/. If you watch a lot of war movies/shows outside of Gundam, it's probably worth a watch but don't expect anything too memorable.

G Gundam is pretty good if you want something more lighthearted with Dragon Ball Z vibes. I'm probably biased though since I watched like 80% of the series while I was on acid.

Anything else I haven't mentioned ranges from bad to alright. Except maybe Gundam 0080, but I haven't seen it. The 1st Gundam Buildfighters show is also pretty good, but it's completely different from any of the other shows mentioned.

G Gundam is generally regarded to be pretty good by most fans, and /m/ likes it too. It's just that 99% of the time whenever someone says G Gundam is their favorite or whines about it not getting enough representation in games like SRW or this, chances are that G is the only actual Gundam series they've seen (at least to completion) and use it as a standard for the franchise as a whole. This is usually accompanied by complaints about how the other series are too slow or boring and don't have enough action. It's kind of like how some people consider TTGL to be the pinnacle of mecha when it's actually the only mecha series they've actually seen aside from maybe Wing/G or Eva.
