Let's Plays and Livestreams are the low hanging fruit that people don't really want to watch unless you have a huge dedicated following.

Reviews tend to get some traction, and usually can develop an audience faster than just lets plays if your articulate and thoughtful of your criticisms.

Meme videos are fun to make and give you some good editing education and experience. These usually require good comedic timing though which not all people have.

Impossible. The only way is if you do some extreme editing, at which point it's not really a lets play anymore.

As for reviews. Just do it. Pick any game. Could be something new, something old, a classic, a somewhat obscure favorite. Play it, get the footage, write a script, and make a review. You'll get criticism pretty quickly as to what's good or not good about the format.
