Is it even possible to git gud at this game without a fight stick?

Buying a stick won't make you magically better, plus if you're used to controllers it's a whole new learning curve.

As for gitting gud without a fightstick, Luffy won EVO2014 using a PS1 pad, Snake Eyez made Top 8 at CapCup2015 with a 360 pad, and Smug won NEC 2 or 3 years in a row with a 360 pad. It's entirely possible, it just takes more practice.

Also, some of the early trials are reliant on very tight links, but after that point they get more into specials and cancels.

Most of the earlier trials I can get the combos close to finish but I'm not sure when the input time is for the last hit I'm really not sure what I'm doing wrong. I'll keep trying the other trials though and see if there is something I can figure out.

Most people get stuck at this point but this is literally just muscle memory. You're probably either going too fast or too slow and will naturally pick it up over a long time. Keep at it my dood!
