Mipha's love for Link was explicitly told in the story. The Zora tunic was an engagement gift Zora girls make for their loved ones (though Mipha never had the chance to ask Link to marry her). The tunic fits link exactly, meaning that Mipha had a feeling for him. Also, in the memory, Mipha said she will also heal Link. They were child time sweet hearts. (In the video Mipha commented on how much Link has grown since his childhood.) So if nothing happened, Link probably would marry Mipha. Although Mipha is not a Hylian, I think Link is open. Hylian, Zora, Rito, Goron, Gerudo, and Korok are referred as races rather than species in LoZ. In side quest from ground up, Hudson (Hylian) married Rhondson (Gerudo). Of course here's very few male Gerudo (roughly one per 100 years), and Gerudo woman marry Hylians. Also both Gerudo and Hylian are of human shape. But the idea is marriage between races is probably acceptable in LoZ's world. They only problem would be that Zoras have a much longer life span than Hylians, so Link would be dead way earlier than Mipha.
