It's simply a historically rooted tradition when it comes to labeling items or things that follow in order (such as sequels). It's entirely customary and not at all enforced by large, but still: if you'd see two games, one called Killer 7, and the other Killer VII, you'd probably quickly realize that one is simply called "Killer Seven", while the other is the seventh entry in the "Killer" series.
That is the main reason. Similarly it has purely customary tradition in building (roman numbers are used to mark dates of construction, often on founding stones, simply because that is how it has been done since age of Rome) and so on.

Some people of course use it to just make things look fancier or whatever too. But really, the most common use is to simply distinguish items in an ordered row, basically a different way of spelling "second" or "seventh".

This was actually a Jewish trick by (((clock makers))).
1 to 12 in proper Roman numerals has 17 I, 5 V and 4 X.
By changing it to IIII, it will instead have 20 I, 4 V and 4 X.
This makes it a lot easier to cast pieces for clocks, since you can just use a single mould with 1 X 1 V and 5 I 4 times, instead of the current mess it is.
