I follow this for getting into Castle Age.

Are you playing with other expansions? If so, then play Magyars. After research costs, the elite Huszars cost 80 food each. They're pretty good all round cav, do bonus dmg against siege equipment (meaning enemies will have a tough time cracking defences if you counter attack appropriately). They have lots of horse archer upgrades, so I usually make several deathballs of Huszars and cav archers. Keep the Cav archers in the rear killing shit, while you use your Huszars to grind down the enemy. Since they only cost 80 food each, you can meatgrind enemies provided you have the farming to keep constant reinforcements or waves to roll up the enemy.

Always ensure you have plenty of trade carts to collect happy (((merchant))) gold, and lots of woodcutters to produce cav archers.
