Super Castlevania IV is prett smooth to control while still being fairly difficult for a new player. If you enjoy that and want a harder game then give the original trilogy a try (although they can be frustrating at times) as well as Rondo of Blood and Bloodlines.
If you want a poor man's Metroid with the Castlevania setting then feel free to give Symphony of the Night a try.

I'm playing Curse of Darkness and I'm unironically enjoying it, a shame about the level design though.
Play 1 and 3, if they are too rough for you go for Rondo or Bloodlines.
As for Metroidvanias, SotN is pretty nice but perhaps too easy, Aria of Sorrow is more of the same. I haven't played the DS games but I heard Portrait of Ruin and Order of Eclessia are pretty alright.
Play Circle of the Moon if you want a mix of both classic and castle exploration.
