No. All of the games are pretty much standalone titles so you can play them in any order you want if you're fine with missing some lore and character references. The logical order is of course starting with Demon's Souls and playing them in release order so you can see how the series has developed and how the pace of the battles has become faster with every new entry but starting with Bloodborne is perfectly fine since it's not actually a part of the Souls series. Now go play the others but don't be expecting super fast action packed gameplay like in BB.
