also a game SHOULD just punish you for your mistakes otherwise it's frustrating. Bloodborne beat my ass but I didn't feel frustrated with the game because I knew it was my fault every time (except for some camera issues on the clerical beast).

No. He said it is a hard game and it's meant to be hard but it's not hard for no reason, it's hard because that best suits the grimdark nature of the game. He just resented the idea of difficulty being the thing that defined the game rather than the universe he put so much effort into building.

DkS was fairly soft compared to Demon's Souls, which set you back at the start of the level each time you died, cut your max HP down even with a ring that gave some of it back, and made the stage harder if you chickened out and exited it.
In any case, games should punish you for mistakes, otherwise they're not mistakes. However that also doesn't mean a game should be frustratingly hard, for instance even in Demon's you kept any progress you made in terms of items or skills, and you could always farm for heals, it was just your currency and some max health that you lost between deaths.
