Why does DBZ looks so limited in gameplay options? Is it just scrubs or will this game actually have less depth than MvCI? Every new gameplay video I see, I get less excited for it.

you should watch the mechanics breakdown on youtube, it has quite a lot of stuff but basically some character will be better as assists than in actual fight. there's a dedicated button for projectiles, dragon rush and that flying homing attack

I'll wait for an actual demo though, i don't trust arc sys with balance after gg rev2 and ill probably only buy the third version of the game.

How much depth are you looking for? What defines depth to you? Is it a mechanical thing related to how individual systems in the game work, or is it more related to the options that players have?
It will be as deep as Persona 4 Arena was, or maybe somewhat more seeing as it's 3v3. Whether that's a good or bad thing is up to you.

Have you seen the character movelists?
It IS basic as shit.

They removed throws/techs and made the game focused on rushdowns. It does not have the depth of MvCI or SFV.

Just like in other Arcsys games, projectiles of the same "level" or strength will clash, but if one projectile is stronger than another then it eats the weaker one and goes through it. Super projectiles are probably all the same level, and they'd easily beat something like the weak Ki blasts or Frieza's discs.

I always wondered how it feels like for two characters from DBZ to punch one another. Does it feel to them like it feels to get punched in real life because of how powerful they are, or is it like some sort of incomprehensible pain they can tolerate because of their Ki?

It depends on the amount of ki someone has and the amount of control they have over it. Ki is really broken in the Dragon Ball universe. If you have enough ki then bullets and gigantic concussive waves have no effect on you. But just having a lot of ki is not enough because if you aren't actively using it to protect yourself then your resistances go down and you take the full brunt of the hit.

The most notorious example is the Goku laser situation. Goku at this point SHOULD be undefeatable. But he dropped his guard and Sorbet was able to OHKO him with a standard laser gun. Lots of ki but in that instance he wasn't using it to protect himself. Same deal with Krillin, not as much ki as Goku but he could use it to make himself impervious to bullets. Or how he threw a rock at Goku's head while he was in a relaxed state and Goku was hurt by it.
