I think KH1's plot is pretty easy to understand, and COM is comprehensible if you ignore its impact on the larger story. It's KH2 where the clusterfuck really begins.

One problem you may have to not understanding it is that you skipped Chain of Memories, though that's a common problem with a lot of people given the initial entry of games to the series. Everything was spread out and hard to keep up with unless you owned the various systems and at the time, people assumed they were just spinoffs and filler which is something they are definitely not. It wasn't until recently that following the games was made more accessible on one system. Chain of Memories connects Kingdom Hearts 1 and 2 together. Skipping that will have you confused as to why Sora was sleeping at the beginning of KH2 and why there are several missing Organization 13 members. There's more to it, but those are just examples.

The best way to understand the story without relying on a quick runthrough is to play the game normally as you would until the end and then look up and read the Secret Reports for the corresponding game you just beat since it tells and explains a fair amount.

KH is a series that people including me love because they've been with it since day one. KH1 was a fucking mindblowing game when you were young. KH2 came out only a few years afterwards, and since then everyone's been hooked waiting for KH3. Nowadays if you're getting into the series the actual draw is the gameplay and the music; the story is only really enjoyable in a "this is fucking insane and I want to see where this goes next" way for new players.
