Same reason they don't need to take a bathroom break to take a shit every game day. Good games abstract irritating or unenjoyable aspects of character roleplay, anyone with a degree of imagination could fill in the blanks like for example all of those items are stored on the airship and when you use them it's abstracting the tedious trip the character makes to return to the airship, retrieve it and return back to where you are.
Weights and bag size limits are some of the most annoying aspects of western rpgs, I'm not sure why anyone would want it.

Assuming your "sun made of fire" was a typical star fusing hydrogen into helium then adding an entire sun's worth of frozen water to it would more than double the hydrogen content as well as the mass. It would most likely immediately supernova but if the original stars were small to begin with it could plausibly form a larger stable star.

The real question is what happens if a sun made of lava comes in contact with a sun made of ice.

Those items aren't real. They never use them in the actual story. Phoenix downs aren't an actual thing. They're just there for the player. They don't actually stop moving in the story when you pause it either, it's just a function for you as the player.

Okay, then you have a sun made of water and that changes nothing. You still have the same amount of hydrogen and oxygen. The only thing that will change is the sun made of water will be physically smaller than the sun made of ice (since water expands when frozen, and contracts when melted). It can even vaporize into steam and the effect will still be the same. And the steam and water will not be able to disperse as such a large mass would be held together under gravity.

Any gameplay mechanics are partial canon. Their use is completely "allowed" in the game's mythos until they conflict with actual canon. And Phoenix Downs don't revive the dead. You don't die in normal combat. They just reverse KOs.
