Considering the base material its really not, we went from 3 tiny levels in 3D Rumble to actual world, levels and bosses in Blowout Blast. That's fair. The EX levels are just remixes of the originals for the most part, but later ones make you go through the map backwards or change where the arena sections are placed.
Getting gold on all EX levels unlocks the Secret Path, a 17 minute endurance run of 5 new stages with the EX reduced health bar.

To be fair its not that bad in the actual context, they're out there making wishes on a wish-making holiday and Kirby just happens to be more innocent and pleasure-oriented than the other two (its not like he's lost anyone either), the constellations are just visuals and Taranza and Susie aren't asking for any pity or expressing their wish, its not like Kirby is dancing at a funeral.
The joke is just the contrast we get to see and comedy always goes hand in hand with tragedy, anything else from Kirby would ruin the joke and bring down the mood anyways so there's good reason to have him food-obsessed here. I'm in the same boat as you. I was never a fan with the whole "poyo" shenanigan in the anime and was a bit annoyed to hear it in Epic Yarn. It's a personal complaint from me, but I wish they bring up Kirby's brash personality from time to time.

Part of me is hoping they revamp most animations and replace the old ones since all the new ones look top tier, something must've changed recently because Taranza also had great fluid movement in KCD.

When playing Robobot, I noticed that like ever boss roars now, then I noticed they have been for years, and by the end of Robobot it was getting kind of old.
