Though he could supposedly walk through fences because of his service with cosmic horrors? Assuming it wasn't all in their heads.
I don't know, I thought the ending was pretty abrupt as well. The uncertainty of the future is one of the game's central themes, but I feel like they could have gone further with the story's horror elements after the big reveal.
Abrupt is pretty light. I'd say it's more like slamming on the brakes as soon as the story gets interesting

I wish the game either went all in on the wholecultthing or just never brought it up and stayed a comfy small town sim the whole way through. preferably the latter because that's why I liked it.

I honestly thought Bea was joking when she offered to add Mae to her Young Socialists groupchat but she talks about being a member of the Young Socialists at the end. Also, how come every character has one facial expression? Like Bea has the sturdiest resting bitch face even when she's happy to be with Mae.
I did not do any of Germ's, Gregg's, Bruce's or the goth kids' routes during the game. What did I miss? Also, did I miss anything if I didn't finish the laptop game or stargazing? What other routes did I miss?

Mae's and Greg's eyes emote a bit. Doesn't happen all the time though.

Except for Gregg, all the routes you mentioned can be done in one playthrough so if you play it again do them, it makes the days less boring. Doing them will just change other dialogue in the game slightly.
Some other routes you may have missed
>talking to the trombone player and the violinist on the rooftops at the later days in the game
>talking to the mouse girl on the rooftops eventually lets you hang out with her
