I practiced on a couple of the mini guardians in a shrine, like 100+ times. They only take a fraction of a heart when they get a shot off. The hardest part about parrying them is the difference in timing depending on their distance from you. But you should be able to parry with 95% success if you practice from the same distance.

I was really terrible at it for a long time. I still prefer to slash them up and shoot their eyes rather than risk a parry, just because getting one wrong makes me want to stop playing
