Pattern recognition is a skill, as is putting the knowledge of said pattern into practice. A game would literally have to play itself for it to require no skill. I mean, fuck, even Kirby games take at least a little bit of skill to complete.

Most games have a tailor-made experience for the player to grow in to, and players have a pretty similar journey with them in terms of how skilled they are. More accurately, how skilled the game makes them feel. Dark Souls has people reporting a wide variety of stories where some bosses thought to be easy had them stuck for hours, and bosses thought to be hard to done in after one try. So there isn't a lot mechanical skill demanded of you, the skill ceiling is very low there, but keeping a good head on your shoulders and understanding how to tackle an encounter is a skill stratosphere.
A well-crafted sense of scale and atmosphere are the best parts of the bosses, once they become "video game boss man" to you, you can see that they're actually not that hard.

You just need to die few times, remember how enemies move and when you can attack, and boom, thats it, done.
There is no decision making like the one in online games where you have to think trough what you are about to do because you can basically get any response, no, you always get the same exact thing you have to remember the patterns.
