To update a game's large files, there are two options
1) simply overwrite the old file with the entire new file, all the gigabytes of it, including the huge amount of unchanged data
2) create a patcher program which selectively edits the file to change only the part that needs changing
#2 requires more dev time and has a chance to create serious issues if you fuck up. For example, EVE Online bricked thousands of computers with their patcher some years ago by accidentally writing over a Windows boot file which shared its name with an EVE Online game file.

Actually you don't need to overwrite one large file, the UE4 files can either be shipped as an unpacked version or as a packed version, and each one of these can be made to only change the files where a change occured. These are extremely small and wouldn't take a large amount of time to do. But they do require someone with a brain to use and nothing chinks could perform.
