Literally any of his mainline games. There isn't a bad one.

But once you play Super Star it'd be hard to go back to the older stuff. I'd say start with:
- Kirby's Adventure or Nightmare in Dreamland
- Dream Land 2
- Dream Land 3 (couuuld get a tad boring, if so, jump to the next)
- Crystal Shards
- Super Star or Super Star Ultra
- Squeak Squad
- Return to Dreamland, Triple Deluxe or Robotobot work similarly.

And if you're curious, play Dream Land 1, Canvas Curse, Air Ride, Mass Attack and Epic Yarn, they're fun but different.

Start with the first game and work your way through the Dreamland trilogy and 64, otherwise when you get to some of the later games in the series you'll be confused over character motivations and certain subtle plot lines.

The only really polarizing games I can really think of are Rainbow Curse, and maybe some of the more obscure spinoffs. And even then those aren't bad games.
I don't know how HAL does it, but they do it.

Super Star is by far the best. Super Star Ultra if you have a DS hanging around. Other than that, can't go wrong with the more modern ones; both Triple Deluxe and Robobot were excellent.

I just played Kirby 64 and I liked how the levels have depth, wind around on a 3D plane and transition into new locations without having to use doors and stuff, is the Switch game going to do that?

In Kirby's Dream Land, on the tile screen, hold Down, Select, and B, set Kirby's health to 1.
Then on the title screen, hold Up, A, and Select. Start your game.
No other games do this.
