This is honestly my favorite fight in the souls series.
Just hit his head and learn how to dodge each attack. They all can be dodged, even the fire attacks.
Also, his health is actually lower than it appears, because if you keep hitting his head, you can do a riposte at the end for massive damage that will usually kill him or leave him on the brink of death

I was 11 and a broken PS2 left me with a gamecube for a long time. I was super thirsty for jrpgs and made it really far into the first Baten Kaitos when my memory card got stolen by the post office.
