Having played bg1 and 2, I'm starting my first icewind dale game now
My party will consist of:
elf fighter with dual swords
dwarf fighter?rogue? with crossbow
pure druid
gnome illusionist
halfling thief? (don't know what to pick for this one)
human cleric
is this going to be fun? should I change something?

You should be fine. You generally want to have all the basic roles covered. Namely
>a tank
>a healer
>an arcane caster for aoe
>a thief/ranger to pick locks, disarm traps and find hidden doors

I wouldn't recommend to have single classed thief and cleric. Pick 4 melee party members, they usually do all the job.

You could just make the gnome a multi-classed illusionist/thief. There is no reason to take a pure thief.
