I used the extendo axe, held R2 and hit him through the gravestones. Still works last I tried.

And remember to dodgeroll behind and off to his side. Trying to roll backwards gets you comboed

Don't own a PS4 or Bloodborne but I beat Cleric Beast and Blood-Starved Beast first try at a friends. This guy took me 3 tries oddly.

If the gravestones are fucking you up, go up the stairs and fight him there.

Not if you have a high damage but slow weapon like I did first time with the Hunter Axe. Then you can do way more damage by strafing behind him and doing a charge attack and even getting an extra few attacks in as he turns if you're in a good position.

if you're talking about using it in it's trick mode then that's a fairly unique situation because hunter axe has large hitbox, high stagger rate, and hits twice for large dmg.
that's why I said almost any time, but I did enjoy the fights that were harder to parry than those that were easier.
