Bottle bugs are probably the biggest and most game breaking. Aside from that, only minor stuff.

Technically there's the crouch stab damage bug, but most people won't notice.
Them there is save and quit in the Ganon fight to go swordless, but that's borderline intentional territory.

Game devs back in the day didn't have access to things like patch-fixes and dlc, so they had to make sure their game is done right the first time. Nintendo still follows this mindset.

I know with BoTW Aounma made everyone who worked on the game play it every day throughout development and they all spent a solid week playing it after it was done. I remember watching this thing where Ken Levine was saying that was one of the things that impressed him most about the game was that even with all the physics interactions he could find no bugs and said how hard it was to play test BioShock with just a few physics interactions.

This same texture glitch exists in Gannon's Tower in Ocarina of TIme. That's interesting.
Also, N64 glitches are really cool, they don't effect casual gameplay at all, and allow for really interesting speedruns. They're almost like an 'endgame' challenge if you beat one, but still want to play more because a lot of them are tricky to pull off.

Nintendo pushes out rushed products when they have to, it's mostly launch titles though: the GameCube lineup wasn't quite there yet (Melee's plethora of glitches, WindWaker's scrapped dungeons, the GC releasing without a built-in broadband adapter) and neither was the 3DS (Mario kart 7) nor the DS (reused minigames in NSMB, SM64DS, Pokémon Diamond and Pearl being beta builds compared to Platinum) nor the Wii (Twilight Princess' cannon softlock getting disks recalled, its save file exploits) etc.

Sure, and stuff like Bowser's big hand when he throws in midair, Mr. Game and Watch being straight up unfinished, massive imbalance across all playable characters, the debug menu, Iwata's personal recount of how he managed to fix everything in like a week, Luigi's tornado being "charged" when the match starts depending on both the stage and the other picked characters, basically Melee was rushed. You know how in the credits of almost every nintendo game have a credit to "Super Mario Club" in it, even if it's not a Mario game? The Super Mario Club is actually an elite group of playtesters. Their ability to spot glitches or areas that would cause glitches to begin with are almost second to none. Couple this with the Japanese workaholic tendencies, and you have a magic combo that erases all traces of scum in any game.

Compare to the west, where it's an open secret that if a playtester finds "too many glitches" that set back release date, they're fired, then I think it's no surprise why Japan blows the West out of the water with their game every single time. Your average shit game from Japan would rate a 6.5/10 almost every time, whereas Western games have to struggle and fight to get it up that high.
