Steve doesn't have much that hits low, and defintely doesn't really have a launcher from a low like most of the characters, so if a Steve is just spamming jabs, you can crouch under it all and punish him. Steve also doesn't really have much for launchers outside of counter hits, so Steve players need to know good mobility and frame data to be efficient. He can't just continuously do a ton of high low string mix ups that lead to a full launcher combo. He is mostly counter hits, spacing, and reads.

You could start out with any character. Some take longer to master than others but the basic Tekken gameplay is the same with every character. No matter what character you decide to main, your first priority is to learn how to play Tekken. Take your character and figure out what basic attacks are good for poking and punishing. Then put those basics into practice and learn to defend against the opponent while getting familiar with the moments when you can punish.

You could play Tekken and be good at it with only a handful of moves. Learning strings and combos are long term goals that enable you to maximize the damage you can put out reliably. But they only come into play when you learn how to punish and launch effectively.

So by all means start out of Yoshi if that's a character that appeals to you. Just remember that just because he has all of these stances and tricky combos doesn't mean you have to learn them asap to be a good Yoshi player.

Kazuya has a bad poking game. He has no good, quick mids to keep the opponent in check for ducking in his face. The fastest move he has for it is df4 which is -8 on block. Meanwhile DJ and Hei have df1s which are -5 at worst and also have extensions to make sure your opponent doesn't want to press buttons. If Kazuya fights a turtle it can be difficult because all they need to do is watch for HS and interrupt wavedash with a quick mid.

Because the majority of people that select those characters are of the "waifu-seeker" category. That's why. Princess Ling is a good example of this since he always commits himself to use Xiaoyu (since she is a PERSONAL favourite). All we're seeing now is the new/next generation of players of the FGC doing the same thing, but, with different characters (which are mostly determined by sex-appeal). The martial art-style and the application of a particular character's techniques, is, another factor that can also affect the players attraction or repulsion to utilize a new character outside of their comfort zone.
