There are games that mix tracks together in different ways.

Games are still lazy as fuck with collisions, using boxes for easy computation despite models moving away from simple shapes years ago.
AI is still not being pushed, ex: FEAR is still being praised for its AI and the game is piss easy.
Simulation in general is way too expensive to do in-game and the only times its good are in simulation-based games meaning the entire game is centered around showing off ONE (or two if it's an expensive game) decent effects.

For the most part these have got worse in the past decade.
I get more impressed trying out random games from the early-mid 2000s that I missed than modern games.
Even when they look like shit they are full of little details that are surprising to me just because modern games don't give a fuck.

That has all improved greatly, but so has complexity of simulated objects. It's also a question of design more than tech. Except fluid simulation, tech isn't there yet for it to be real time, come back in 10 years.
